    Prepare the Bechamel Sauce

    In a small saucepan, melt 1 tablespoon of butter over medium heat. Add 1 tablespoon of flour and whisk continuously for about 1 minute until it forms a roux. Gradually add 60 ml of milk, whisking constantly until the mixture thickens. Season with nutmeg, salt, and black pepper. Remove from heat and set aside.

    Assemble the Sandwich

    Preheat your oven to 180°C (350°F). Take 2 slices of sourdough bread and spread some butter on one side of each slice. Place one slice of bread, butter side down, on a baking tray. Layer with ham and half of the Gruyère cheese. Spread the prepared béchamel sauce over the cheese, then top with the second slice of bread, butter side up. Repeat the process for the second sandwich.

    Cook the Sandwich

    Bake the assembled sandwiches in the preheated oven for about 10-15 minutes until golden brown and the cheese is melted.

    Fry the Eggs

    While the sandwiches are baking, heat the remaining tablespoon of butter in a non-stick skillet over medium heat. Crack the eggs into the skillet and fry them until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and black pepper.
