Prepare the batter
In a large bowl, mix the all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Add the liquid
Gradually whisk in the beer or sparkling water until the batter is smooth and thick.

Heat the oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the cod
Dip each cod fillet into the batter, allowing any excess to drip off, and carefully place it in the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the potatoes
Peel and cut the russet potatoes into thick fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Fry the potatoes
Drain and dry the potatoes thoroughly. Fry them in the hot oil (the same oil used for the fish) for about 4-5 minutes until golden and crispy. Remove and drain on paper towels.

Season the fries
Drizzle the fries with malt vinegar and sprinkle with salt to taste.

Prepare the vegetables
Shred the green cabbage and grate the carrot.

Mix the dressing
In a large bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Add the cabbage and carrot to the dressing and toss until well combined. Adjust seasoning to taste.
Tartar Sauce

In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and salt. Stir until well blended.
