Rinse the trout fillets under cold water and pat them dry with paper towels. Set aside.

Marinate in Buttermilk
Place the dried trout fillets in a shallow dish and pour the buttermilk over them. Make sure the fillets are completely submerged. Cover with plastic wrap and refrigerate for at least 30 minutes to 1 hour.

In a large bowl, combine the all-purpose flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to ensure all dry ingredients are evenly distributed.

In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the flour mixture into it; if it sizzles, the oil is hot enough.

Remove the trout fillets from the buttermilk, allowing any excess to drip off. Dredge each fillet in the flour and cornmeal mixture, pressing gently to ensure an even coating on both sides.
