Caramelized Pineapple Sundae Directions

Prepare the Pineapple
Peel the fresh pineapple, remove the core, and cut it into rings or wedges.

Caramelize the Pineapple
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the pineapple pieces and cook until golden brown, about 3-5 minutes per side. Sprinkle with 1/4 cup of sugar and continue cooking until the sugar melts and caramelizes, about 2-3 minutes. Set aside.

Make the Miso Caramel
In a small saucepan, combine the remaining sugar, butter, and heavy cream over medium heat. Stir until the sugar dissolves. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and whisk in the miso paste until smooth. Allow to cool slightly.

Prepare the Spiced Cake
In a mixing bowl, whisk together the flour, baking powder, cinnamon, and nutmeg. In another bowl, beat the eggs and vanilla extract until frothy. Gradually add the dry ingredients to the egg mixture and mix until just combined.

Bake the Spiced Cake
Preheat the oven to 350°F (175°C). Grease and flour a small cake pan. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing.

Assemble the Sundae
In a serving dish, place a slice of spiced cake at the bottom. Top with a scoop of vanilla ice cream, followed by the caramelized pineapple. Drizzle with miso caramel and sprinkle with chopped white chocolate.
