Inspect mussels: discard any with cracked shells and tap any open shells to ensure they close; discard if they remain open. Rinse well under cold water, scrub shells, and remove beards.

Pat mussels dry with paper towels and season lightly with 1 tsp salt, 1/2 tsp black pepper, and 1 tbsp lemon juice. Let sit while you make the sauce (5–10 minutes).

Sauté aromatics

In a large deep skillet or wide saucepan over medium heat, add 1 tbs olive oil and 2 tbs butter. When butter foams, add 1/2 cup finely diced yellow onion and sauté until translucent, about 4–5 minutes. Add 4 minced garlic cloves and 1 tsp grated ginger and cook 30–45 seconds until fragrant, stirring continuously to avoid burning.

Build masala

Stir in 2 tbs tomato paste and cook 1–2 minutes, breaking it down so it darkens slightly. Add 1 tsp ground coriander, 1/2 tsp ground cumin, 1 tsp paprika, 1/4 tsp turmeric, and 1/4 tsp red chili flakes. Cook the spices 1 minute to bloom the flavors, stirring constantly.

Deglaze and simmer

Pour in 1/2 cup dry white wine (or seafood stock) to deglaze the pan, scraping any brown bits from the bottom. Simmer until reduced by about half, roughly 2–3 minutes.

Finish the cream

Lower heat to medium-low and stir in 1/2 cup heavy cream and 2 tbs plain Greek yogurt (if using). Simmer gently until sauce is slightly thickened, about 2–3 minutes. Taste and season with additional salt and black pepper as needed. Stir in 2 tbs chopped cilantro and remove from heat but keep warm.

Cook mussels in sauce

Return the skillet with the warm masala cream sauce to medium-high heat. Add the seasoned mussels in a single layer if possible. Cover the pan with a tight-fitting lid and steam until mussels open, 5–7 minutes. Gently shake or stir the pan once halfway through to redistribute sauce; discard any mussels that remain closed after cooking.

Finish and adjust

With lid off, check sauce consistency. If too thin, simmer uncovered 1–2 minutes to reduce slightly. Stir to coat mussels well so shells are glazed with sauce. Taste and adjust seasoning with additional salt, pepper, or a squeeze of lemon if desired.

Plate

Transfer mussels and sauce to a warm shallow bowl or serving platter. Sprinkle with extra chopped cilantro and serve immediately with crusty bread or toasted baguette slices and lemon wedges for squeezing.
