Brush olive oil
Lightly brush the dough surface with 1 tablespoon olive oil to create a barrier so the garlic butter soaks in evenly.
Garlic Herb Butter
Make garlic butter
In a small saucepan over low heat (or in a microwave-safe bowl), melt 6 tbs unsalted butter. Stir in minced garlic, 2 tbs chopped parsley, 1 tsp dried oregano, 1 tsp salt, 1 tsp black pepper, and 2 tbs grated Parmesan until combined. Keep warm but not hot to avoid burning the garlic.
Spread butter
Reserve about 1 tablespoon of the garlic butter for brushing after baking. Using a spoon or pastry brush, evenly spread the remaining garlic herb butter over the oiled dough, leaving a 1/2 inch rim for structure.

Evenly sprinkle the shredded mozzarella (2 cups) and shredded cheddar (1 cup) over the buttered dough. For an even bake and extra flavor, leave a small border (about 1/2 inch) around the edges. If using, sprinkle 1 tsp pizza or Italian seasoning on top.
Score for sticks
Using a sharp knife or pizza cutter, lightly score the dough into 1-inch wide sticks — cut through the cheese and dough but do not separate pieces. This makes pulling apart easier after baking.
Bake
Slide the sheet pan or pizza stone into the preheated oven. Bake for 12–16 minutes, until the crust is golden at the edges and the cheese is bubbly and starting to brown in spots. Baking time may vary by oven and thickness of dough.
Finishing
Finish and garnish
Remove the bread sticks from the oven. Immediately brush the reserved 1 tablespoon of garlic butter or the extra melted butter/olive oil over the hot cheese and crust to add shine and flavor. Sprinkle 1 tbs chopped fresh parsley and 1/2 tsp red pepper flakes (if using) evenly over the top.
Cut and serve
Using the previous scoring, separate the sticks fully. Transfer to a serving platter and serve warm with marinara sauce, ranch, or garlic aioli for dipping if desired.
