Prepare bread

Preheat and slice

Preheat your oven to 425°F (220°C). Place the whole loaf on a cutting board and slice it in half horizontally lengthwise to create two long bread halves. If you prefer individual pieces, you can instead slice the loaf into 1- to 1½-inch thick diagonal slices without cutting all the way through (for pull-apart style).

Make garlic butter

In a small bowl, combine the softened unsalted butter, minced garlic, chopped parsley, olive oil, salt, black pepper, and red pepper flakes. Use a fork or small spatula to mash and mix until smooth and evenly distributed. Taste and adjust salt or garlic as desired.

Assemble

Place the bread halves cut-side up on a baking sheet lined with parchment paper or lightly greased. Spread the garlic butter mixture evenly over each cut surface, covering all edges. Sprinkle the shredded mozzarella evenly over the buttered bread halves. If using, evenly dust the grated Parmesan over the mozzarella.

Bake in the preheated 425°F (220°C) oven for 8–12 minutes, until the cheese is melted and bubbling. For a golden-brown, slightly blistered top, switch the oven to broil on high for 1–2 minutes—watch closely to prevent burning.

Finish and serve

Remove the cheese bread from the oven. If you baked halves, let rest 1–2 minutes, then slice into serving pieces if not already sliced. If you used pull-apart slices, serve as-is. Garnish with chiffonade basil and drizzle with a little extra virgin olive oil if desired. Serve hot.
