Vegetable and Toppings

Method

Preparation

  1. 1

    Caramelize the Onions

Heat 1 tablespoon of olive oil in a skillet over medium heat. Slice the onions thinly and add them to the skillet. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized. Season with a pinch of salt and set aside.

  2. 2

    Prepare the Wild Mushrooms

In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Clean the wild mushrooms and chop them into bite-sized pieces. Add them to the skillet and sauté for about 5-7 minutes until they are browned and tender. Season with salt and black pepper to taste. Remove from heat and set aside.

  3. 3

    Cook the Nopales

If using fresh nopales, rinse them under cold water and pat them dry. Remove the thorns and slice them into strips. Add the last tablespoon of olive oil to the skillet and sauté the nopales for about 5 minutes until they are tender and slightly translucent. Season with salt and set aside.

  4. 4

    Prepare the Spinach

Add the spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat and combine with the other prepared vegetables (mushrooms, nopales, and caramelized onions).

  5. 5

    Combine Ingredients

In a large bowl, mix together the sautéed mushrooms, nopales, spinach, and caramelized onions. Add the corn and drizzle with lime juice. Mix well and adjust seasoning with more salt and black pepper if desired.

  6. 6

    Assemble the Tacos

Serve the vegetable mixture in warm taco shells and top with crumbled Cotija cheese. Enjoy your delicious vegetarian tacos!
