Dough Preparation

Make the Dough
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

Once boiling, remove from heat and stir in all-purpose flour until the mixture forms a ball. Allow to cool for a few minutes.

Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Prepare the Chocolate Filling
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.

Add the semi-sweet chocolate chips to the hot cream. Stir until the chocolate is completely melted and the mixture is smooth. Let it cool slightly.
Churro Assembly

Fill the Churros
Using a pastry bag fitted with a large star tip, fill the churro dough into a piping bag.

Pipe 4-5 inch long strips of dough onto parchment paper. Once done, use a knife to cut the strips.

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the churros in batches until golden brown, about 2-3 minutes on each side.

Remove churros from the oil and place them on paper towels to drain.

In a shallow bowl, mix together granulated sugar and ground cinnamon.

Using a piping bag, fill the fried churros with the prepared chocolate filling.
