EXTRáS

  1. 1

    Prepare the Ingredients

Chop the bacon into small pieces. Remove the casing from the chorizo if needed. Dice the onion and mince the garlic. Chop the chipotle peppers finely.

  2. 2

    Cook Bacon and Chorizo

In a large skillet, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon and drain on paper towels, leaving the bacon fat in the skillet.

  3. 3

    Sauté Onions and Garlic

In the same skillet with the bacon fat, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

  4. 4

    Add Chorizo

Add the chorizo to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 5-6 minutes.

  5. 5

    Incorporate Beans and Seasonings

Drain and rinse the black beans. Add the beans to the skillet along with the chopped chipotle peppers, cumin, beer, and tequila. Mix well to combine.

  6. 6

    Simmer

Bring the mixture to a simmer and let it cook for about 10-15 minutes, stirring occasionally, until heated through and flavors have melded together.

  7. 7

    Finish and Serve

Stir in the cooked bacon and season with salt and pepper to taste. Garnish with freshly chopped cilantro before serving.
