Prepare the Plantains
Peel the sweet plantains by cutting off the ends and making a lengthwise slit in the skin. Carefully remove the peel and slice the plantains diagonally into 1-inch thick pieces.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat. You will know the oil is ready when a small piece of plantain sizzles when added.

Fry the Plantains
Once the oil is hot, add the sliced plantains in batches, ensuring not to overcrowd the pan. Fry them for about 2-3 minutes on each side, or until they are golden brown and caramelized.

Drain Excess Oil
Using a slotted spoon, carefully remove the fried plantains from the oil and place them on paper towels to drain any excess oil. Sprinkle with salt to taste.

Serving Suggestion
Serve the fried sweet plantains warm, drizzled with Mexican crema and topped with crumbled queso fresco. Enjoy as a delicious side dish or snack!
