    Prepare the Seafood

    Start by cleaning and cooking the octopus and shrimp. Bring a pot of salted water to a boil, then add the octopus. Boil for about 25-30 minutes or until tender. Remove from water and let cool. For the shrimp, cook in the same boiling water for 3-4 minutes until they turn pink, then remove and cool.

    Chop Ingredients

    Once the seafood is cooled, chop the octopus and shrimp into bite-sized pieces. Dice the roasted tomatoes, red onion, jalapeño (remove seeds for less heat), and avocado. Set aside.

    Mix the Ceviche

    In a large mixing bowl, combine the chopped seafood with the diced vegetables. Add lime juice, salt, and chopped cilantro. Mix well to ensure everything is evenly coated.

    Chill

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

    Serve

    Spoon the cocktail ceviche into serving dishes or glasses. Garnish with additional cilantro if desired. Enjoy immediately with tortilla chips or on its own.
