Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Meat
In a large bowl, mix together the salt, black pepper, cumin, and oregano. Rub this mixture all over the pork shoulder pieces.

Combine Ingredients
Place the seasoned pork in a slow cooker. Add the whole garlic cloves, orange juice, and lime juice. Cut the onion into quarters and add it to the cooker.

Cook the Pork
Cover the slow cooker and cook on low for 8 hours or until the pork is tender and easily shreds.

Shred the Meat
Once cooked, remove the pork from the slow cooker and place it on a cutting board. Shred the meat using two forks.

Crisp the Carnitas (Optional)
For crispy carnitas, spread the shredded pork on a baking sheet and broil in the oven for 5-7 minutes, stirring occasionally until crispy.

Garnish
Finely chop the cilantro and sprinkle it over the carnitas before serving.
