Method

Prepare Pizza Dough

    Activate the yeast

    In a small bowl, combine warm water, sugar, and yeast. Stir and let sit for 5–10 minutes until the mixture is foamy.

    Mix the dough

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

    Knead and rise

    Knead the dough on a floured surface for 7–10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover with a damp towel, and let rise in a warm place for 1 hour or until doubled in size.

Prepare BBQ Chicken Topping

    Cook the chicken

    Preheat a skillet over medium heat. Rub chicken breast with olive oil, salt, and pepper. Cook for 6–7 minutes per side or until fully cooked. Let rest for 5 minutes, then dice into bite-sized pieces.

    Toss with BBQ sauce

    Place the diced chicken in a bowl and toss with 1/4 cup of the BBQ sauce until evenly coated. Set aside.

    Preheat oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.

Assemble and Bake Pizza

    Shape the dough

    Punch down the risen dough and roll it out on a floured surface to a 12-inch circle. Transfer to a parchment-lined pizza peel or baking sheet.

    Add sauce and cheese

    Spread the remaining 1/4 cup of BBQ sauce evenly over the dough. Sprinkle with smoked Gouda and mozzarella cheeses.

    Add toppings

    Distribute the BBQ chicken evenly over the cheese, then scatter the sliced red onions on top.

    Bake

    Transfer pizza to the oven (or pizza stone) and bake for 12–15 minutes or until the crust is golden and cheese is bubbling and slightly browned.

    Garnish and serve

    Remove from oven and sprinkle with fresh chopped cilantro. Drizzle with additional BBQ sauce if desired. Slice and serve hot.
