BBQ Chicken
Prepare and cook the chicken
Preheat a grill or skillet over medium heat. Rub chicken breasts with olive oil, salt, and pepper. Grill or cook chicken for about 6–7 minutes per side, or until fully cooked and juices run clear.
Remove the chicken from heat and let rest for 5 minutes. Slice into bite-sized pieces and toss with BBQ sauce until well coated.
Herb Ranch Dressing
Make the herb ranch
In a small mixing bowl, combine ranch dressing, chopped parsley, dill, chives, garlic powder, lemon juice, salt, and black pepper. Whisk until smooth. Taste and adjust seasoning as needed. Refrigerate until ready to use.
Salad Base
Assemble the salad
In a large salad bowl, combine chopped romaine lettuce, cilantro, basil, diced tomatoes, black beans, corn, and shredded Monterey Jack cheese. Toss gently to mix.
Add the BBQ chicken pieces and drizzle with herb ranch dressing. Toss again to combine, making sure everything is evenly coated.
Top with crispy tortilla strips just before serving to maintain crunch.
