Graham Cracker Crust

1. Prepare the crust mixture

Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until the texture resembles wet sand.

2. Form and bake the crust

Press the crumb mixture evenly into the bottom and up the sides of a 9-inch pie dish. Use a flat-bottomed glass to press firmly. Bake for 8 minutes, then remove and let cool while preparing the filling.

Key Lime Filling

3. Mix the filling

In a medium bowl, whisk together the sweetened condensed milk and egg yolks until smooth. Stir in the Key lime juice and zest until well combined.

4. Fill and bake the pie

Pour the filling into the cooled graham cracker crust. Bake at 350°F (175°C) for 15 minutes, or until the center is set but still slightly jiggly. Remove from oven and let cool at room temperature for 30 minutes, then refrigerate for at least 3 hours or overnight.

Whipped Cream Topping

5. Prepare the whipped cream

In a chilled mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form, about 2–3 minutes.

6. Top the pie

Just before serving, spread or pipe the whipped cream over the chilled pie. Garnish with additional lime zest or lime slices if desired.
