Prepare the Marinade

In a bowl, combine soy sauce, fish sauce, lime juice, brown sugar, minced garlic, grated ginger, and vegetable oil. Mix well until sugar dissolves.

Marinate the Chicken

Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken and refrigerate for at least 30 minutes to 2 hours.

Grill the Chicken

Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Remove from grill and let rest for 5 minutes before slicing into strips.

Make the Peanut Sauce

In a medium bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, minced garlic, grated ginger, and chili garlic sauce. Gradually add warm water while whisking until sauce reaches a smooth, pourable consistency.

Assemble the Thai Chicken Dish

On a serving plate or platter, arrange sliced grilled chicken. Drizzle with the peanut sauce. Top with shredded mozzarella, bean sprouts, julienned carrots, slivered scallions, and fresh cilantro leaves.
