Method

Prepare the Pizza Base

Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

Roll out the pizza dough on a lightly floured surface to about 12 inches in diameter. Transfer to a sheet of parchment paper for easy handling.

Brush the surface of the dough with olive oil and evenly distribute the minced garlic over the top.

Assemble the Cheese Blend

In a medium bowl, combine the fresh mozzarella, low-moisture mozzarella, Monterey Jack, smoked Gouda, and Romano cheese. Mix well to distribute evenly.

Add Toppings

Evenly spread the cheese blend over the prepared dough, leaving a small border around the edge for the crust.

Layer the thin slices of fresh tomato over the cheese, spacing them evenly.

Sprinkle salt and black pepper evenly over the tomatoes and cheese.

Bake and Finish

Carefully transfer the pizza (with parchment) onto the preheated pizza stone or baking sheet. Bake for 10–13 minutes, or until the crust is golden and the cheese is bubbling and slightly browned in spots.

Remove the pizza from the oven and immediately scatter fresh basil leaves over the top.

Let the pizza rest for 2–3 minutes before slicing and serving.
