Prepare the Fish
Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat dry with paper towels. Make three diagonal slashes on each side of the fish.

Season the Fish
Drizzle the olive oil over the fish and rub it into the skin and inside the cavity. Season generously with salt and black pepper, both inside the slashes and inside the cavity.

Stuff the Fish
Stuff the cavity of the fish with sliced lemon, minced garlic, fresh parsley, and thyme sprigs.

Place the fish on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, or until the flesh is opaque and flakes easily with a fork.
