Kombucha Brewing Process

    Prepare the Sweet Tea

    In a large saucepan, bring 8 cups of water to a boil. Add the sugar and stir until dissolved. Remove from heat and add the black tea bags. Allow the tea to steep for about 15 minutes, then remove the tea bags and let the sweet tea cool to room temperature.

    Once the sweet tea has cooled, pour it into a large glass jar (1-gallon size recommended). Add 1 cup of starter tea and gently place the SCOBY into the jar.

    Fermentation

    Cover the jar with a clean cloth or coffee filter and secure it with a rubber band. Place the jar in a warm, dark place for 7-14 days. Taste the Kombucha after a week; it should be slightly tangy and fizzy.

    Flavoring with Guava

    Once the Kombucha has reached your desired flavor, remove the SCOBY and set it aside. Stir in 1 cup of guava puree into the Kombucha.

    Seal the bottles and let them sit at room temperature for an additional 3-5 days to carbonate. Afterward, refrigerate the bottles to stop the fermentation process.
