    Wash and peel the Russet potatoes. Cut them into thin strips to form fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry with a paper towel.

    In a large, heavy pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure accuracy.

    Carefully add a handful of the dried potato strips to the hot oil. Fry in batches, making sure not to overcrowd the pot. Cook for about 4-5 minutes or until golden brown and crispy. Remove fries with a slotted spoon and drain on paper towels.
