Seafood and Battering Ingredients
Method
Preparation and Cooking Instructions
- 1
Prepare the Battering Mixture
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, whisking until smooth and slightly thick.
- 2
Heat the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of the batter into it—if it sizzles and rises, it’s ready.
- 3
Batter and Fry the Seafood
Dip the calamari rings and fish fillets into the batter, allowing excess batter to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown and crispy.
- 4
Drain and Serve
Using a slotted spoon, remove the fried seafood from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your choice of dipping sauces.
