Directions

  1. 1

    Prepare the Ingredients

Start by gathering all the ingredients. Rinse the green beans, grape tomatoes, and radishes. Slice the radishes and red onion thinly.

  2. 2

    Cook the Eggs

Place the eggs in a pot of boiling water and cook for 8-10 minutes for hard-boiled eggs. Once done, transfer to an ice bath to cool, peel, and set aside.

  3. 3

    Grill the Salmon

Preheat the grill to medium-high heat. Season the salmon fillets with olive oil, salt, and pepper. Grill the salmon for about 4-5 minutes on each side or until cooked through.

  4. 4

    Blanch the Green Beans

In a pot of boiling salted water, blanch the green beans for about 3-4 minutes until bright green and tender-crisp. Drain and immediately place in ice water to stop cooking.

  5. 5

    Make the Herb Vinaigrette

In a bowl, whisk together olive oil, red wine vinegar, Dijon mustard, chopped fresh herbs, salt, and pepper to taste.

  6. 6

    Assemble the Salad

On a large platter, layer mixed greens, followed by the grilled salmon, blanched green beans, sliced radishes, grape tomatoes, olives, capers, and sliced red onion. Cut the hard-boiled eggs in half and place on top.

  7. 7

    Dress and Serve

Drizzle the herb vinaigrette over the salad and serve immediately.
