    Prepare the Ingredients

    Chop the onion and tomatoes. Cook the bacon until crispy, then crumble it. Rinse the spinach and set aside.

    Sauté the Vegetables

    In a large oven-safe skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Stir in the tomatoes and crumbled bacon.

    Mix the Eggs

    In a large bowl, whisk together the eggs, salt, and black pepper until well combined. Pour the egg mixture over the sautéed vegetables and bacon in the skillet.

    Add Cheese

    Sprinkle the cheddar and jack cheeses evenly over the top of the egg mixture.

    Cook the Frittata

    Cook on the stovetop for about 5 minutes until the edges start to set. Then, transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the center is set and the top is golden.

    Remove from the oven, let cool for a few minutes, then slice and serve warm.
