    Prepare the Béchamel Sauce

    In a saucepan over medium heat, melt 2 tablespoons of butter. Whisk in 2 tablespoons of flour and cook for 1-2 minutes until golden. Gradually add 1 cup of milk, whisking continuously until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg.

    Assemble the Sandwich

    Spread 1 tablespoon of grain mustard on each slice of rustic bread. Layer with a slice of country ham, followed by a generous portion of Gruyère cheese. Pour some béchamel sauce over the cheese and sprinkle with herbes de Provence. Top with another slice of bread.

    Grill the Sandwich

    In a skillet, melt 1 tablespoon of butter over medium heat. Place the assembled sandwich in the skillet and cook for 3-4 minutes on each side until golden brown and the cheese is melted. Optionally, you can cover the skillet to help melt the cheese.

    Remove the sandwich from the skillet, slice in half, and serve immediately with a side salad or pickles.
