Cooking Instructions
- 1
Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- 2
Mix Wet Ingredients
In another bowl, beat the egg and then mix in the buttermilk and melted butter until well combined.
- 3
Combine Mixtures
Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are okay.
- 4
Add Blueberries
If using blueberries, gently fold them into the batter.
- 5
Heat the Griddle
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
- 6
Cook the Pancakes
Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- 7
Serve
Serve warm with butter and syrup, adding more blueberries on top if desired.
