    Prepare the Chorizo

    In a skillet over medium heat, add the chorizo and cook until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.

    Caramelize the Onions

    In the same skillet, add olive oil and sliced onions. Cook over medium-low heat, stirring occasionally, until the onions are caramelized, about 10-15 minutes.

    Beat the Eggs

    In a bowl, beat the eggs together with salt and black pepper until well mixed.

    Cook the Omelet

    In a non-stick skillet, heat a small amount of olive oil over medium heat. Pour in the beaten eggs and allow to set for a minute. Once the edges start to lift, add the chorizo, caramelized onions, roasted red peppers, cheddar, and jack cheese on one half of the omelet.

    Fold and Serve

    Carefully fold the omelet in half over the fillings and let it cook for another 2-3 minutes until the cheese is melted. Slide onto a plate and serve hot.
