Collect Turkey Drippings
After roasting the turkey, pour the drippings from the roasting pan into a measuring cup. Allow it to sit for a few minutes, then skim off the excess fat from the top.

Prepare Broth
In a large pot, combine the turkey drippings and chicken or turkey broth. Stir together until well mixed.

Make the Roux
In a separate saucepan, over medium heat, add the all-purpose flour and enough drippings to make a paste. Stir continuously for about 3-4 minutes until the mixture is golden brown.

Combine Roux with Broth
Slowly add the roux to the broth mixture while continuously whisking to prevent lumps from forming.

Season the Gravy
Add salt, black pepper, garlic powder, onion powder, and dried thyme to the mixture. Stir well to combine and let the gravy simmer over medium heat for about 10-15 minutes, or until it thickens to your desired consistency.

Final Adjustments
Taste the gravy and adjust seasoning if necessary. If the gravy is too thick, you can add more broth to reach your preferred consistency.
