Gelato Preparation
Heat the Milk and Cream
In a saucepan, combine whole milk and heavy cream. Heat over medium heat until just below boiling, stirring occasionally.
Whisk Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.
Cook the Mixture
Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).
Add Vanilla Extract
Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.
