Method
Preparation of Potatoes
- 1
Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.
- 2
Soaking the Fries
Place the cut fries in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch.
Frying the Fries
- 3
Heating the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Drying the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess water.
- 5
Frying the Fries
Carefully add a batch of fries to the hot oil. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove from the oil and drain on paper towels.
Flavoring and Serving
- 6
Flavoring the Fries
Once all the fries are fried, place them in a large bowl. Drizzle the truffle oil over the hot fries and sprinkle with truffle salt. Toss to coat evenly.
- 7
Garnishing
Chop the fresh parsley and sprinkle it over the fries along with the grated Parmesan cheese. Serve immediately while hot.
