Method
Cooking the Tortellini

Boil Water
In a large pot, bring salted water to a boil.

Cook Tortellini
Add the fresh tortellini to the boiling water and cook according to package instructions, usually about 3-5 minutes, until they float to the surface.

Drain
Once cooked, drain the tortellini in a colander and set aside.
Making the Parma Rosa Sauce

Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant but not browned.

Add Crushed Tomatoes
Pour in the crushed tomatoes and stir well. Let it simmer for 5 minutes.

Stir in Heavy Cream
Slowly add the heavy cream, stirring to combine. Allow the sauce to simmer for another 5 minutes.

Add Cheese and Seasoning
Stir in the grated Parmesan cheese, fresh basil, salt, and black pepper. Cook for another 2 minutes until the cheese is melted and the sauce is creamy.
Combining and Serving

Combine Tortellini and Sauce
Add the drained tortellini to the sauce, gently tossing to coat them in the creamy sauce.

Serve the tortellini in bowls, garnished with fresh basil leaves and extra grated Parmesan cheese.
