Cooking Tortellini

Boil Water
Fill a large pot with water and bring it to a boil over high heat.

Cook Tortellini
Add the fresh cheese tortellini to the boiling water. Cook according to package instructions, typically around 3-5 minutes, until they float to the surface and are tender.

Drain Tortellini
Once cooked, drain the tortellini in a colander and set aside.
Making Parma Rosa Sauce

Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Cream and Tomatoes
Pour in the heavy cream and crushed tomatoes into the skillet with garlic. Stir well to combine.

Season the Sauce
Add the grated Parmesan cheese, dried basil, salt, and black pepper. Stir the mixture and let it simmer for about 5-7 minutes until the sauce thickens slightly.

Combine Tortellini with Sauce
Add the cooked tortellini to the sauce in the skillet, tossing gently to coat all the pasta evenly with the sauce.

Add Mozzarella
Sprinkle the shredded mozzarella cheese over the tortellini and allow it to melt for about 2-3 minutes, stirring gently.
Serving

Serve the Tortellini Parma Rosa hot, garnished with additional Parmesan cheese or fresh basil if desired.
