Ravioli Dough Preparation

    Make the Dough

    In a mixing bowl, combine 2 cups of all-purpose flour and 1 tsp of salt. Make a well in the center and add 2 large eggs and 1 tbs of olive oil. Mix the ingredients until they form a dough.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

Sweet Potato Filling Preparation

    Cook the Sweet Potatoes

    Boil or steam 2 medium sweet potatoes until tender, about 20-25 minutes. Let them cool, then peel and mash them in a bowl.

    Mix the Filling

    Add 1 cup of ricotta cheese, 1 tbs of grated Parmesan cheese, 1 tsp of ground nutmeg, 0.5 tsp of salt, and 0.5 tsp of black pepper to the mashed sweet potatoes. Mix until well combined.

Ravioli Assembly

    Roll Out the Dough

    Divide the dough into four sections. Roll out each section into a thin sheet using a pasta machine or rolling pin.

    Fill the Ravioli

    Place small teaspoons of sweet potato filling about 1 inch apart on one sheet of dough. Moisten the edges with water, then cover with another sheet of dough. Press firmly to seal.

    Cut the Ravioli

    Use a sharp knife or pasta cutter to cut out the ravioli. Ensure the edges are well sealed. Repeat with the remaining dough and filling.

Nutmeg Cream Sauce Preparation

    Prepare the Sauce

    In a saucepan, melt 2 tbs of butter over medium heat. Add 1 cup of heavy cream, 0.5 tsp of ground nutmeg, 0.25 tsp of salt, and 0.25 tsp of black pepper. Stir continuously until the sauce thickens slightly, about 5-7 minutes.

Cooking and Serving

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon.

    Plate the ravioli and drizzle the nutmeg cream sauce over the top. Garnish with additional Parmesan cheese if desired.
