Method
Prepare the Salmon

Season the Salmon
Sprinkle salt and black pepper over the salmon fillets on both sides.

Make the Meyer-Lemon Emulsion

Emulsify
Slowly drizzle in olive oil while whisking continuously until the mixture thickens. Season with a pinch of salt.
Prepare the Sweet Corn Risotto

Toast the Rice
Add Arborio rice to the saucepan and toast for 2 minutes, stirring frequently.

Add Broth Gradually
Start adding the vegetable broth, one ladle at a time, stirring continuously. Wait until the liquid is mostly absorbed before adding more. This should take about 20 minutes.

Incorporate Corn and Cheese
When the rice is al dente, stir in the sweet corn kernels and grated Parmesan cheese. Cook for an additional 5 minutes until creamy.
Prepare the Petite Arugula Salad

Dress the Salad
In a large bowl, combine arugula, halved cherry tomatoes, olive oil, and balsamic vinegar. Toss gently to coat.

Add Cornbread Croutons and Bacon
Gently fold in the cornbread cubes and crumbled bacon just before serving.
