Meatballs Preparation

    Combine Ingredients

    In a large mixing bowl, combine the ground lamb, ricotta cheese, goat cheese, minced garlic, chopped parsley, chopped mint, egg, bread crumbs, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Form Meatballs

    Using your hands, form the mixture into meatballs, about 1.5 inches in diameter. Place the meatballs on a baking sheet lined with parchment paper.

Cooking the Meatballs

    Preheat Cast Iron Skillet

    Preheat a cast iron skillet over medium-high heat. Add a tablespoon of olive oil to the skillet.

    Cook Meatballs

    Once the oil is hot, add the meatballs to the skillet in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove from skillet and set aside.

Toasted Pizza Dough

    Prepare Pizza Dough

    On a floured surface, stretch or roll out the pizza dough into a thin round (about 1/4 inch thick).

    Brush both sides of the dough with olive oil and sprinkle with garlic powder and salt.

    In the same skillet used for the meatballs, add the dough and cook for about 2-3 minutes on each side until golden and crispy.

    Slice the toasted pizza dough into wedges and serve with the lamb meatballs on the side. Enjoy with a drizzle of olive oil or a squeeze of lemon if desired.
