Preparing the Salad

Prepare the Kale
Wash the kale thoroughly under cold water to remove any dirt or grit. Remove the tough stems and tear the leaves into bite-sized pieces. Place the kale in a large salad bowl.

Add Cherry Tomatoes
Rinse the cherry tomatoes under cold water and cut them in half. Add the halved cherry tomatoes to the bowl with the kale.
Making the Croutons

Prepare the Focaccia
Preheat your oven to 375°F (190°C). Cut the focaccia bread into bite-sized cubes.

In a mixing bowl, toss the focaccia cubes with olive oil, garlic powder, and salt until evenly coated.

Spread the seasoned focaccia cubes on a baking sheet in a single layer. Bake in the preheated oven for 10-15 minutes or until golden brown and crispy, stirring halfway through.

In a mixing bowl, combine the Greek yogurt, grated Parmesan cheese, lemon juice, Worcestershire sauce, minced garlic, and black pepper. Whisk until smooth and well combined.

Once the croutons are ready, add them to the salad bowl with kale and cherry tomatoes. Drizzle the dressing over the salad and toss gently to combine.
