Prepare the Ice Cream Base
In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat, stirring until the sugar dissolves completely.

Add Salt and Vanilla
Once the mixture is heated through, add the salt and stir. Split the vanilla beans lengthwise and scrape the seeds into the mixture. Add the vanilla extract as well. Stir to combine.

Infuse Flavor
Remove the saucepan from heat and allow the mixture to cool slightly. Let it steep for 30 minutes to infuse the vanilla flavor.

Chill the Mixture
After steeping, cover the mixture and refrigerate for at least 4 hours, preferably overnight. This ensures the mixture is completely chilled and flavors meld.

Churn the Gelato
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

If desired, add chocolate chips or crushed nuts during the last few minutes of churning.
Freezing

Transfer and Freeze
Transfer the churned gelato into an airtight container and smooth the top with a spatula. Freeze for at least 4 hours or until firm.
