Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Add olive oil. Gradually mix the flour into the eggs using a fork until a shaggy dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll the Dough

    After resting, divide the dough into four pieces. Using a pasta machine or rolling pin, roll each piece out to your desired thickness.

Cooking the Pasta

    Boil the Pasta

    Bring a large pot of salted water to a boil. Add the rolled pasta and cook for 2-4 minutes, or until al dente. Drain and set aside.

Adding Proteins

    Prepare Proteins

    Choose one or more of the optional proteins. For pan-seared chicken, season with salt and pepper, and cook in a skillet over medium heat until cooked through. For shrimp, sauté in olive oil with herbs until pink. For beef tenderloin tips, sear in a hot pan until desired doneness. For salmon, roast in the oven at 400°F until flaky. For portabella mushrooms, grill or sauté until tender. For anchovies, simply add straight to the pasta.

    Combine

    Toss the cooked pasta with your choice of proteins and any additional seasonings or sauces you prefer.
