Caramelized Onions

    Prepare the Onions

    In a skillet over medium heat, add the olive oil. Once hot, add the thinly sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized.

Truffle Aioli

    Make the Aioli

    In a bowl, combine mayonnaise, truffle oil, minced garlic, and lemon juice. Whisk together until smooth. Season with salt to taste. Set aside.

Assembling the French Dip

    Prepare the Sandwich

    Preheat the oven to 180°C (350°F). On a baking sheet, layer the focaccia slices. Top each slice with a generous portion of thinly sliced roast beef and a slice of Swiss cheese. Bake in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly.

    Remove the sandwiches from the oven and top with the caramelized onions. Spread a layer of truffle aioli on the top slice of focaccia. Serve the French dip sandwiches hot with a side of warm beef broth for dipping.
