Crust Preparation

Prepare the Crust
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and resemble wet sand.

Press the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the bottom of a measuring cup to help press it down evenly.

Pre-bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and set aside to cool.
Filling Preparation

Mix the Filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer on medium speed.

Add Sugar and Sour Cream
Gradually add granulated sugar and sour cream to the cream cheese, mixing until fully incorporated.

Add Flavorings
Add vanilla extract and lemon juice to the mixture, mixing well until combined.

Incorporate Eggs
Add eggs one at a time, mixing on low speed until just combined after each addition. Be careful not to overmix.

Pour into Crust
Pour the filling mixture over the cooled crust in the springform pan, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
