    Preheat your oven to 400°F (200°C). Wash and dice the potatoes into small cubes. Toss them in a bowl with olive oil, salt, and black pepper until evenly coated.

    Spread the seasoned diced potatoes on a baking sheet in a single layer. Roast them in the preheated oven for about 25-30 minutes, or until golden brown and crispy, stirring halfway through.

    Cook the Bacon

    While the potatoes are roasting, cook the applewood smoked bacon in a skillet over medium heat. Cook until crispy, about 5-7 minutes, then transfer to a paper towel-lined plate to drain excess grease.

Cooking the Eggs

    In the same skillet used for the bacon, discard excess grease leaving about 1 tablespoon in the pan. Crack the farm fresh eggs into the skillet, cooking them sunny-side up or to your preference.
