    Roast the Potatoes

    Preheat your oven to 400°F (200°C). Cut the potatoes into bite-sized pieces and toss them in a bowl with 1 tablespoon of olive oil, salt, and black pepper. Spread the potatoes on a baking sheet in a single layer and roast in the preheated oven for about 25-30 minutes, or until golden and crispy, turning halfway through.

    Cook the Bacon

    In a skillet over medium heat, add the applewood smoked bacon slices. Cook for about 5-7 minutes, flipping occasionally until the bacon is crispy. Remove from the skillet and place on paper towels to drain excess fat.

    Fry the Eggs

    In the same skillet used for the bacon, add 1 tablespoon of olive oil if needed. Heat over medium-low. Crack the eggs into the skillet carefully. Season with salt and black pepper. Cook for about 3-4 minutes for sunny-side up, or longer if you prefer them over-easy or over-medium.

Plating

    On a plate, arrange the roasted potatoes, top with the crispy bacon, and place the fried eggs alongside. Spoon the diced tomatoes over the top or serve them on the side for a fresh touch.
