Main Ingredients

Mule Sauce

Method

Preparing the Pork

  1. 1

    Marinate the Pork

In a bowl, combine the minced garlic, olive oil, chopped rosemary, salt, and black pepper. Add the pork tenderloin and coat it well in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.

  2. 2

    Cook the Pork

Preheat your grill or oven to 400°F (200°C). Remove the pork from the marinade and place it on the grill or in a baking dish. Cook for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes.

Making the Mule Sauce

  1. 3

    Prepare the Sauce

In a small saucepan over medium heat, melt the butter. Once melted, stir in honey, apple cider vinegar, Dijon mustard, and grated ginger. Whisk until combined and simmer for 3-5 minutes. Remove from heat and set aside.

Assembling the Dish

  1. 4

    Slice the Pork

After the pork has rested, slice it into thin pieces.

  2. 5

    Assemble the Mules

Warm the corn tortillas on a skillet or in the microwave. Place slices of pork on each tortilla, drizzle with the mule sauce, and top with chopped cilantro. Serve with lime wedges on the side.
