Prepare the Mixture
In a large bowl, combine lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, old bay seasoning, egg, chopped green onions, bread crumbs, salt, and pepper. Gently fold the ingredients together until mixed well, being careful not to break up the crab meat.

Form the Cakes
Using your hands, shape the crab mixture into patties, about 2-3 inches in diameter. Place the formed crab cakes on a plate and refrigerate for at least 30 minutes to help them hold their shape.

Cook the Crab Cakes
In a large skillet, heat vegetable oil over medium heat. Once hot, add the crab cakes, cooking in batches if necessary. Cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the skillet and place on a paper towel to drain excess oil.

Prepare the Broth
In a saucepan, bring the chicken broth to a simmer and keep it warm over low heat.

Cook the Rice
In a large skillet, melt butter over medium heat. Add arborio rice and cook for 2-3 minutes until lightly toasted. Stir frequently to avoid burning.

Add Wine
Pour in the white wine and stir until it is mostly absorbed by the rice.

Incorporate Broth Gradually
Begin adding the warm chicken broth one ladle at a time, stirring continuously and allowing the liquid to be absorbed before adding more. This process should take about 18-20 minutes.

Finish the Risotto
Once the rice is creamy and al dente, stir in lemon juice, orange zest, grated Parmesan cheese, salt, and pepper to taste. Remove from heat.
Roasted Garlic Aioli

Roast the Garlic
Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for about 25-30 minutes until soft and caramelized. Allow to cool before handling.

Make the Aioli
In a food processor, combine the roasted garlic, mayonnaise, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
