Method
Preparing the Chicken
Season and Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper on both sides.
Cook the Chicken
Place the seasoned chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.
Preparing the Dressing
Combine Dressing Ingredients
In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, grated Parmesan cheese, salt, and black pepper until smooth and creamy.
Assembling the Salad
Prepare the Romaine
Chop the romaine hearts into bite-sized pieces and place them in a large salad bowl.
Add Croutons and Dressing
Add croutons and the prepared dressing to the romaine. Toss gently until the lettuce is well coated.
Top with Chicken and Garnish
Slice the grilled chicken and lay it on top of the salad. Garnish with sun-dried tomatoes and shaved Parmigiano-Reggiano. Serve immediately.
