Make the Crepe Batter

In a mixing bowl, whisk together the flour, milk, eggs, melted butter, salt, and vanilla extract until smooth. Let the batter rest for at least 30 minutes.

Cook the Crepes

Heat a non-stick skillet over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes or until the edges begin to lift. Flip and cook for another 1 minute. Repeat with the remaining batter.

Prepare the Ricotta Filling

In a bowl, mix together the ricotta cheese, powdered sugar, and vanilla extract until well combined. Set aside.

Prepare the Berries

Wash and gently pat dry the seasonal berries. Slice strawberries if using.

Honey-Orange Sauce

Make the Sauce

In a small saucepan over low heat, combine honey, orange juice, and orange zest. Stir until the mixture is warmed through and combined. Remove from heat.

Assembly

Assemble the Crepes

Take a cooked crepe and spread a generous spoonful of the ricotta filling down the center. Top with a handful of seasonal berries. Fold the crepe over and place on a plate.

Serve

Drizzle the warm honey-orange sauce over the filled crepes and serve immediately.
