    Roasting the Eggplant

    Preheat your oven to 400°F (200°C). Cut the eggplant in half lengthwise and place it cut-side down on a baking sheet. Roast in the oven for about 30-35 minutes, or until the skin is charred and the flesh is soft.

    Preparing the Baba Ghanoush

    Allow the roasted eggplant to cool slightly, then scoop out the flesh into a food processor. Add tahini, garlic, lemon juice, olive oil, salt, cumin, and black pepper. Blend until smooth and creamy.

    Finishing Touch

    Crumble the feta cheese into the baba ghanoush and pulse a few times to combine. Adjust seasoning with salt and pepper to taste.

    Making the Tapenade

    In a food processor, combine black olives, capers, garlic, olive oil, and lemon juice. Pulse until the mixture is finely chopped but still has some texture. Adjust seasoning to taste.

Toasted French Baguette

    Toasting the Baguette

    Slice the French baguette into 1-inch thick slices. Brush both sides with olive oil and place them on a baking sheet. Toast in the oven at 400°F (200°C) for about 10-12 minutes or until golden brown and crispy.
