    Prepare the Quinoa

    Rinse the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 400 ml of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside.

    Cook the Aymara Potatoes

    Wash the Aymara potatoes and cut them into cubes. In a large pot, bring water to a boil and add the cubed potatoes. Cook for about 10-15 minutes until tender. Drain and set aside.

Mixing and Serving

    Combine Ingredients

    In a large bowl, combine the cooked quinoa and Aymara potatoes. Add chopped fresh cilantro, diced red bell pepper, diced red onion, lime juice, olive oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Prepare Garnish

    Slice the avocado and crumble the feta cheese.

    Plate the quinoa and Aymara potato mixture. Top with sliced avocado and crumbled feta cheese. Serve immediately and enjoy!
