Method

For the Applewood Burger

    Prepare the Burger Patties

    In a mixing bowl, combine the ground beef, salt, and black pepper. Form the mixture into four equal patties.

    Cook the Bacon

    In a skillet, cook the applewood smoked bacon slices over medium heat until crispy. Remove and drain on paper towels.

    Caramelize the Onions

    In the same skillet, add sliced red onion and cook over medium-low heat until soft and caramelized, about 15 minutes.

    Grill the Patties

    Preheat a grill or grill pan over medium-high heat. Cook the burger patties for about 4-5 minutes on each side for medium doneness. Add a slice of Gorgonzola cheese on top of each patty during the last minute of cooking to melt.

    Assemble the Burger

    On the bottom half of each bun, layer leaf lettuce, the burger patty with melted Gorgonzola, bacon marmalade, and caramelized onions. Top with the other half of the bun.

For the Roasted Garlic Aioli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in foil and roast for 30 minutes until soft. Let cool, then squeeze the garlic into a bowl.

    Make the Aioli

    In a bowl, mix the roasted garlic with mayonnaise, lemon juice, olive oil, and salt until smooth. Adjust seasoning as needed.

For the Bacon Marmalade

    Cook the Bacon

    In a skillet, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

    Prepare the Marmalade

    In the same skillet, add chopped onion and cook until soft. Add the cooked bacon, brown sugar, and balsamic vinegar, and simmer on low for 10-15 minutes until thickened.

For the Truffle Parmigiano Fries

    Prepare the Potatoes

    Wash and cut the russet potatoes into thin fries or wedges.

    Fry the Potatoes

    In a deep fryer or large pot, heat oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Drain on paper towels.

    Season the Fries

    Drizzle the fries with truffle oil and sprinkle with grated Parmigiano-Reggiano, salt, and black pepper. Toss to coat.
