1. Prepare the Lemongrass

Using a knife, trim the ends of the lemongrass stalks and gently bruise them with the back of the knife to release their flavor.

2. Infuse the Water

In a large pot, combine the bruised lemongrass, kaffir lime leaves, and water. Bring to a boil, then reduce heat and let simmer for about 10 minutes.

3. Add Honey

After simmering, remove from heat and stir in the local honey until fully dissolved. Let the mixture cool to room temperature.

4. Strain the Mixture

Once cooled, strain the liquid through a fine mesh sieve to remove the lemongrass and lime leaves.

5. Mix Lemon Juice

In a pitcher, combine the strained infusion with fresh lemon juice. Stir well to combine.

6. Serve

Fill glasses with ice cubes, pour the Thai lemonade over the ice, and garnish with lemon slices. Serve immediately.
